I never really ate anything red velvet that was until I married my husband and my mother-in-law, Jeanne made her red velvet cake for my father-in-law’s birthday. This famous red velvet cake is an annual tradition in their house and that was when I fell in love with red velvet. While I love red velvet cake these mouthwatering Red Velvet Cake Mix Cookies take the cake.

You even have the choice to leave out the chocolate chips and make this just a 3-ingredient red velvet cookie but we love chocolate in our house and I love how it “dresses” up these cookies.

Depending on what kind of chocolate you prefer, you can really use any type of chocolate chips you desire. From white, semi-sweet, milk or dark, any of these chocolate chips will work with these red velvet cookies.

I prefer dark chocolate but since my son Madden loves milk chocolate, I made these with him in mind. He literally won’t eat anything with dark chocolate and can tell what kind of chocolate I used in a recipe upon the first bite. I guess you can say he is our chocolate connoisseur.

Growing up I made cake mix cookies all the time but it has been like 20-years since I last made them. And then when I wanted to make a simple treat recently, it was when I remembered this recipe. I was so excited to share this recipe with my kids and they are obsessed.

How do you make cake cookies?

You are just a few simple steps to make these delicious cake cookies.

Make sure to preheat oven at 350 degrees F (175 degrees C).

Then in a large bowl mix together cake mix, eggs, and oil in a large bowl until well combined. Stir in chocolate chips, if you are adding those in. These are totally optional, but I sure do love them.

Scoop dough with cookie dough scoop (or by the tablespoon) and set on ungreased cookie sheets. It’s important that the cookie sheets are ungreased.

Place the cookies in the preheated oven and bake for 10-12 minutes.

Yes, this works really well. I stack them and place them in a freezer Ziplock bag. Make sure to seal shut with squeezing as much air out as possible.

  • 1/2 cup canola oil coconut and vegetable oil work too
  • 3/4 - 1 cup chocolate chips

Instructions
