Red Velvet Cake Mix Cookies are the perfect easy, chewy, delicious cookie recipe to make for Valentine’s Day, Christmas, or just because. You only need a box of cake mix and a couple of ingredients to make the best cake-like cookies around. They are some of my family’s favorites.

My daughter and I love to make these cookies over the holiday, but I never need an excuse to make this sweet treat. I’ll make them almost anytime she asks.

These are also the perfect cookie recipe if you are ever in need of a snack and you are in a bit of a time crunch.

Who would have thought you could make cookies from cake mix? When I first tried cake cookies I was blown away. Not only are they soft and chewy, but they are super easy to make.

Unlike a regular cookie, these are super soft and tend to stay thick.

What is the best thing about this red velvet cookie recipe? The fact that they only use 3 ingredients is my FAVORITE fun fact. There are a few other great reasons to love them.

These cookies are also super moist. I love to eat them when they are slightly cooled but still served warm. It’s like eating a cake and a cookie all at once.

Red Velvet 3 Ingredient Cake Mix Cookies

Cookies are always one of my favorite sweet treats to make, and these are some of my favorite chewy cookies.

You only need to have a 1″ cookie scoop or Tablespoon, baking sheet or silicone baking mat, spatula or wooden spoon, and parchment paper or cooking spray along with your ingredients. I rarely use my mixer for these.

To make this delicious cookie recipe you only need 3 ingredients.

  • 1 (18oz) box Red Velvet Cake Mix (I like to useDuncan Hines)
  • 2 eggs1/3 cup vegetable oil*optional
  • 1/3-2/3 cup white chocolate chips

I usually have all 3 of these things on hand, so it’s simple for me to make them on a whim. You don’t have to add the chocolate chips, but I like to add them on occasion. Plus, they just look pretty with the chips added.

How to Make Red Velvet Cookies

1. Preheat oven to 375 degrees Fahrenheit.

2. In a medium mixing bowl add the mix, eggs, and vegetable oil. Mix well with a wooden spoon or spatula. Lastly, add the white chocolate chips to the cookie dough.

3. Scoop 1″ cookie dough balls or a heaping Tablespoon of dough and then place 1 inch balls on a prepared baking sheet.

4. Bake in the preheated oven for 10-12 minutes (I start checking the cookies between 8-10 minutes) or until the edges of the cookies start to brown. Carefully remove the baking sheet from the oven.

5. Transfer the cookies from the baking sheet after 1 minute, and place them on a wire rack for 5-10 minutes before serving.

Finish them with a little powdered sugar after cooling or sandwich them with a little cream cheese frosting for red velvet sandwich cookies.

What’s the best way to store cake mix cookies?

I generally store my red velvet cookies and red velvet sandwich cookies in an airtight container in the fridge for up to 3 days (if I even have any leftovers!)

Can I freeze red velvet cake mix cookies?

You can easily freeze these if you have leftover cookies.

Freeze baked cookies on a cookie sheet or cooling rack, and then store them stacked in an airtight container with parchment paper in between. You can store them in the freezer for up to 3 months.

To heat back up, just place them in the microwave for 35 – 45 seconds, or until warm.

If making red velvet sandwich cookies, do not sandwich the baked cookies with frosting before freezing.

What’s the best way to make cake mix cookies?

You can make these red velvet cookies in a few different ways and we are going to share some of our favorite ideas.

If you want extra-large Red Velvet cookies, use a small ice cream scoop instead of a cookie scoop. Make sure you add extra chocolate chips!

Make red velvet crinkle cookies by sprinkling powdered sugar over the dough balls. When the cookies are baking, the powdered sugar will separate as the cookie dough flattens leave little “crinkles”.

You can also sprinkle powdered sugar over the cookies after baking.

If making these cookies over Christmas, consider adding peppermint chips for even more flavor.

To make them even better you can add a little buttercream frosting or cream cheese frosting in between and have red velvet cake mix sandwiches. Now, this is the BEST way to eat these delicious cake mix cookies.

You can also add additional mixins such as semi-sweet dark chocolate chips or top with sprinkles.

With these simple ingredients, you can change these up quite easily.
