How to make Sugar Free Cake Mix Red Velvet Cookies.

Prep time: 15 minutes
Bake Time: 10-12 minutes.
Servings: 24 cookies

  1. Preheat your oven to 325. Prepare your baking sheets for nonstick. I like to use parchment paper or a baking mat for a recipe such as this one.
  2. Place your dry cake mix in to a large bowl and use a whisk to break up any lumps. If you are adding unsweetened cocoa mix, you can whisk that in here as well.
  3. Add the oil to the mixing bowl and blend until creamy. Then add the eggs and mix until just combined.
  4. For the red food coloring, start by stirring in up to a tablespoon of the food coloring and then adding a small amount as needed to reach your desired 'red' coloring of the dough. Do not add more than two tablespoons total.
  5. Lastly, fold in ¾ cup of the white chocolate chips.
  6. Use a cookie scoop to scoop out the cookie dough and then place the cookies on to your prepared baking sheets at least an inch and a half apart.
  7. Bake the cookies for 10-12 minutes or until the edges appear to be set. The center will still be soft.
  8. Carefully press the remaining white chocolate chips into the cookies.
  9. Allow the cookies to set on the baking sheet for about five minutes before transferring them to a wire cooling rack to finish cooling.

Expert Tip 👉 Because these cookies are red in color, you may not be able to see if the cookies have browned and are done baking. It is a good idea to check the sides of the cookies to see if they are set instead.

    Common Chocolate Cake Mix Questions.

Can you use cake mix to make recipes other than cake?

Cake mix can be used to make recipes other than cakes.
It can take just a few adjustments to make cake mix a perfect ingredient as well.

Cake mix already has the basic dry ingredients that are used in other baked goods such as brownies or cookies. These dry ingredients are also already measured which means that less time is needed to prepare the recipe.

If you are looking for convenience and simplicity in a recipe, using a cake mix to bypass the dry ingredients can be a good way to go.

Why should you not use cake mix to make other recipes?

If you want your baked recipe to be exactly what it is expected to turn out to be if you had you used your own measured ingredients, you may want to skip the idea of using cake mix. Measuring your own ingredients may take a bit longer to do but, it also insures that you are getting close to exact results.

Here is how cake mix may differ from measured ingredients.

Cake mix will have leavening that is needed for cakes to rise to be fluffy and airy. Sometimes (not always) you may not want this in a cookie or something else. Also, cake mixes may have other added ingredients that are intended to make a cake look or taste better as a cake.
